Atomical Cuts
Council Regulation (EC) 1208 of 28 April 1981, art. 3 and enclosures, provides for the categories into which adult bovine carcasses are divided. The distinction by category requires indispensable anatomical references related to the animals’ gender and age:
- by gender: entire males, castrated males and females;
- by age: bovines up to 18 months, over 18 months and up to 24 months, and over 24 months;
Bovines can be split into two macro categories: veal and adult bovine. Individuation of the category is the first technical qualification of the animal.
