Research & Development 

 

 

At Inalca JBS Spa Research & Development carries out the task of studying new technologies and formulations to promote innovation in all products the company produces in the fresh, frozen and canned product areas.

 

With this as its mission, the R&D team works in close collaboration with Marketing and Engineering to create new products by developing increasingly improved prototypes, progressing from laboratory simulations to pilot plant production and finally on to trials on the industrial lines.

 

The heart of these activities is the R&D laboratory, situated in the Castelvetro (Modena) plant. The food technologies used there unite natural creativity with thorough scientific know-how in meat raw material quality and safety, and meat processing technology themes.

 

It is in this context that the ingredients are chosen, according to their biological value and their reaction in the food, to achieve high organoleptic (appearance, aroma and flavour), hygiene and nutritional quality which can be retained unchanged until the expiry date.

 

All the development stages benefit from accurate instrument analyses and liking ratings expressed by trained panels and consumer groups according to a certified protocol.
